Similar to tea, the various types of peppers are usually created through different degrees of ripening or processing of the fruit from the same flowering vine (Piper nigrum), which is commonly referred to as black pepper or simply pepper. Twice a year, the plant bears small drupes, its peppery grains. But there are other plants at home in the in the world of pepper, which should also be mentioned here. One thing they all have in common is that they enrich perfume creations with their mildly sharp, spicy and herbaceous notes, often with lively, exciting and sparkling aspects. They create real appetite stimulants in the headnotes or spicy charmers in the heart.
Pepper sorts which originate from Piper nigrum
• Green pepper comes from the still immature fruits which are either put into brine, dried or freeze dried to keep their color. In fragrances, it appears as a green note with a light spiciness.
• Black pepper is also harvested before ripening while it still has a green to yellowish color, but the fruit becomes black after drying.
• White pepper is ripe fruit which is freed from the peel by placing it in water for about one to two weeks.
• Red pepper denotes the ripe, red and unpeeled fruits which, like green pepper, is laid in brine.
Other peppery spices
• Contrary to popular belief, the pink pepper has a very different origin, its fruits come either from the Brazilian pepper tree (Schinus terebinthifolius) or from the Peruvian pepper tree (Schinus molle). Especially in the case of colorful pepper mixes, the red grains are fruits from these trees. The fragrance ranges from dry to warm with a rose aspect.
• Sichuan pepper also has nothing to do with piper nigrum. It is Zanthoxylum piperitum and is also known as Japanese pepper, anise pepper, mountain pepper or Chinese pepper. Named after the Chinese province of Sichuan, the scented chili pepper has a tingling taste and slightly numbs the lips and tongue. In fragrances one can imagine Sichuan pepper as a short-lived peppery, tingling and sharp accent.
• Cubeb pepper (Piper cubeba), also called tail pepper, belongs to the genus pepper in the family of the pepper plants. The fruits are harvested whilst green and then dried. The fragrance is pleasant and aromatic.
• Pimento (Pimenta dioica, syn: Pimenta officinalis) or carnation pepper is a species of the myrtle family. Its versatile taste is reminiscent of pepper, cinnamon, nutmeg and cloves. The drupes are harvested while they are still green and possess their whole aroma, which is lost when ripe. The fragrance of allspice in perfumes ranges from balsamic to spicy and is reminiscent of cloves.
